Ingredients:
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 1/2 cup diced onions
- 1/2 cup diced bell peppers assorted colors
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 8 small taco shells or tortillas
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions:
In a skillet over medium heat, cook the ground beef or turkey until browned and cooked through
Drain excess fat if needed
Add the taco seasoning and follow the package instructions, usually by adding water and simmering until thickened
In another pan, saut the diced onions and bell peppers until they start to soften, about 3-4 minutes
Warm the taco shells or tortillas in the oven according to package instructions
To assemble the tacos, spoon the seasoned meat into each shell, followed by diced tomatoes, sauted onions and bell peppers, shredded lettuce, and cheddar cheese
Top with a dollop of sour cream and a sprinkle of fresh cilantro
Serve with lime wedges on the side for squeezing over the tacos
