Quinoa Salad with Black Beans, Corn, and Tomatoes



A refreshing and nutritious quinoa salad featuring the wholesome combination of black beans, corn, cherry tomatoes, and avocado. This vibrant dish is not only delicious but also packed with protein and essential nutrients.

Ingredients:

  • 1 cup quinoa, rinsed and cooked
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup feta cheese, crumbled optional
  • Salt and pepper to taste

Instructions:

In a large bowl, combine cooked quinoa, black beans, corn, cherry tomatoes, red onion, and cilantro

Gently fold in diced avocado and feta cheese if using

Season the salad with salt and pepper to taste

Toss the ingredients until well combined

Serve chilled and enjoy!

Clean Honey Mustard Chicken Salad



For a satisfying clean eating meal, try this tasty and healthy salad with grilled honey mustard chicken, creamy avocado, crispy bacon, and a tangy dressing.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 avocado, sliced
  • 4 slices cooked bacon, crumbled
  • 4 cups mixed greens
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions:

Warm the grill up to a medium-high level

Take a small bowl and mix honey and Dijon mustard together

This will make the honey mustard marinade

Sprinkle the chicken breasts with salt and pepper, and then brush them with the honey mustard sauce

Chicken should be cooked all the way through after being grilled for 6 to 8 minutes on each side

Mix mixed greens, cherry tomatoes, red onion, avocado slices, and crumbled bacon in a large bowl

Set this bowl aside while you cook the chicken

Salt and pepper should be mixed with olive oil, apple cider vinegar, and other spices in a separate small bowl

Take a break after cooking the chicken and cut it into pieces

Spread the dressing over the salad, then add the sliced chicken and gently toss everything together

Serve right away and enjoy!
