Skinny Texas Cowboy Cookies



A healthier version of the traditional cowboy cookie recipe is offered by these Skinny Texas Cowboy Cookies. They are a delectable treat for any occasion, full of whole wheat flour, oats, nuts, and the perfect amount of chocolate chips and raisins.

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup old-fashioned oats
  • 1/2 cup shredded coconut
  • 1/2 cup chopped pecans
  • 1/2 cup mini chocolate chips
  • 1/2 cup raisins

Instructions:

Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a baking sheet with parchment paper

Beat the softened butter, brown sugar, and granulated sugar in a sizable mixing bowl until the mixture is light and fluffy

Blend the egg and vanilla essence until thoroughly blended

Mix the baking soda, salt, and whole wheat flour in a different bowl

Mixing until just combined, gradually add the dry ingredients to the wet mixture

Add the mini chocolate chips, chopped pecans, shredded coconut, oats, and raisins and stir until well combined

Round tablespoons of cookie dough should be dropped, separated by about 2 inches, onto the baking sheet that has been prepared

Bake for 10 to 12 minutes, or until the edges start to turn a light golden color, in a preheated oven

After a few minutes of cooling on the baking sheet, move the cookies to a wire rack to finish cooling
