Antipasto Grilled Shrimp Salad



This Antipasto Grilled Shrimp Salad is a delicious mix of flavors, with fresh greens, juicy grilled shrimp, and traditional antipasto ingredients. It's easy to make and full of Mediterranean-style goodness, making it perfect for a light and refreshing meal.

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup marinated artichoke hearts, drained
  • 1/2 cup sliced black olives
  • 1/4 cup thinly sliced red onion
  • 4 cups mixed salad greens
  • 1/4 cup crumbled feta cheese
  • 1/4 cup balsamic vinaigrette

Instructions:

Preheat grill to medium-high heat

In a bowl, toss shrimp with olive oil, salt, and pepper until evenly coated

Grill shrimp for 2-3 minutes per side or until pink and cooked through

In a large salad bowl, combine cherry tomatoes, artichoke hearts, olives, red onion, and mixed greens

Top salad with grilled shrimp and feta cheese

Drizzle balsamic vinaigrette over the salad
