Ingredients:
- 1 cup French lentils du Puy
- 2 cups water
- 2 tablespoons olive oil
- 2 onions, thinly sliced
- 1/4 cup pistachios, chopped
- Salt to taste
- Black pepper to taste
Instructions:
Rinse the French lentils du Puy under cold water
In a pot, bring 2 cups of water to a boil, then add the rinsed lentils
Reduce heat to low, cover, and simmer for about 20-25 minutes or until lentils are tender but still hold their shape
Drain any excess water
While the lentils are cooking, heat olive oil in a skillet over medium heat
Add thinly sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes
Once the lentils are cooked and the onions are caramelized, combine them in a serving dish
Sprinkle chopped pistachios over the lentils and onions
Season with salt and black pepper to taste
Gently toss everything together to combine
Serve warm as a main dish or a side dish
